The perfect breakfast for a leisurely morning at home or eating on the go

Other than beautiful bags, one of our favorite things at Meanwhile are simple, easy-to-make recipes that taste great. 

Heather has a strong love of cooking and an even stronger love for sharing good food with good people. Occasionally, meals are planned out depending on the number of guests and occasion. But more times than not, among brainstorming new bag designs, running a business, baseball practice, riding horses, taking care of the cows and being a mom and wife, it's not uncommon to have a slice of fresh baked sourdough or treat whipped up for folks that find themselves in Heather and Bobby’s kitchen at the right time. 

Why baked oatmeal?
Baked oatmeal is a staple in Heather’s kitchen and a favorite for her kiddos, though it’s not just a kid-friendly meal. We like it because it takes 30 minutes to make, is filling for a morning at work or for kids in school, and it requires a few ingredients you likely have in the fridge even when groceries are running low. It is easy to share, easy to eat, easy to make and we think it tastes really good. But give it a try yourself and let us know what you think.

Ingredients you will need:

  • 3 cups oats

  • 1 cup milk

  • ½ cup maple syrup

  • 1 stick melted butter

  • 3-4 eggs 

  • 2 tsp baking powder

  • 1 tsp salt

  • 1 mashed banana

  • 2 peeled and chopped apples

Add all ingredients in a large bowl and mix until fully combined. Pour into muffin tins and bake at 350 degrees for 25 minutes. No seriously, that’s it. It takes minimal time, and requires very few dishes to clean up which is another thing we really love about this recipe. It’s great to eat right out of the oven, send it to school or take it to work in a thermos to keep it hot for a while.
