What's delicious, takes minimal time and is great for your skin?

What’s tasty, good for your skin and takes under 10 minutes to prepare?

Pickled radishes! This recipe has only 7 ingredients, takes less time than folding a load of laundry and is great for both your gut health and your skin. Not only that, but it looks pretty on the plate, it costs next to nothing and lasts up to a month. We’ve put together the perfect recipe for pickled radishes. They are pink, have a little crunch and you’ll be wondering why you didn’t make them sooner. 

How exactly should you eat a radish?  Eat it like candy. Toss it on a salad. Add it to avocado toast. A pop of color on a charcuterie board? Sure! There really is no limit to what you can do with it, making it the perfect addition to your culinary repertoire. 

If you have a garden, radishes are one of the fastest growing vegetables you can plant - from seed to harvest they typically are ready to eat within 4 weeks. If you have little kids and a garden, they are especially great because they are easy to pick and have a reddish-pinkish color making it extra fun for kids (and adults too, let’s be honest). We love making these radishes straight from the garden, but if you don’t have a garden, have no fear! You can pick them up at any grocery store, or local farmer’s market today.

Below is a list of the things you’ll need:

  • 1 glass jar + top to fit the jar 

  • 18-20 radishes

  • ½ cup organic apple cider vinegar

  • 1 tablespoon sugar

  • 1 ½  teaspoon salt

  • 1 cup hot or warm water

  • ½ tablespoon of black peppercorns

  • 1 sprig of rosemary

  • You can add in other flavoring herbs and spices such as thyme, mustard seed, garlic cloves, dill, coriander, fennel (we love rosemary when making these)

Prepare the Radishes

Wash and slice as thinly as possible. We like to use a mandoline slicer. You can use a knife, but it is difficult to get them as thin as possible, so using a mandoline slicer is highly recommended. Place all sliced radishes, herbs and spices in the clean jar. 

Make the Brine

In a measuring cup or small bowl, combine the apple cider vinegar, salt, sugar, and warm water. Stir until the sugar and salt are dissolved. Don’t heat your water on the stove; we want a crunch in the bite and heating the brine will make the radishes soggy over time. Pour this mixture into your radish jar. Leave on the counter for 1 hour. Add the top after the hour is up and place in the fridge. We recommend waiting at  least 1 day before enjoying it so the flavor can build. 

Keep refrigerated and consume within 3 - 4 weeks for the best flavor and texture. And remember, as you eat these, you can add in more radishes to the original brine and jar. 

Let’s talk about the health benefits of a radish, shall we?
Because this particular recipe calls for pickled radishes making them fermented, they are exceptionally gut healthy. They’re a natural probiotic that your gut and body can thrive on. Not only that, but radishes are full of antioxidants. Antioxidants help your body ward off illnesses and act as disease prevention. The natural compounds in antioxidants may help protect against certain cancers, including cervical, breast, prostate, colon, liver and lung cancer. As if that isn’t enough, radishes also contain vitamin c which aids in protecting the body’s cells from the damaging effects of aging. Radishes have a high fiber content, so although you may want to immediately stock your fridge with them, and eat them for every meal (we get it, we do too) make sure you build them in overtime to prevent bloating. 

This is a simple recipe that keeps on giving back. You feel good when you eat it, it does good work in your body, it doesn't cost much and it's fun to make. Do yourself a favor and make this as a staple item in your fridge. We bet you're going to love it!
